We talk about the importance of dry farming in Southerns California, where water is a precious commodity, and how Ruben has actually trained the roots of his vines to go incredibly deep in the limestone for the precious water. These winemakers are incredibly attentive to organic farming and the natural fermentation process. Even the stories behind their labels is fantastic!
