This week’s mocktail – THE OTOLARYNGOLOGIST
1 oz strong rooibos tea, chilled
1 oz cream soda
½ oz vanilla rooibos syrup (I used Portland Syrup— but it's fun to experiment with other brands and flavors)
4 dashes of Dram Palo Santo bitters
Shake all ingredients over ice, then strain into a chilled glass and garnish with flowers or a vanilla stick.
